This creamy tortellini with fire roasted tomatoes is amazing! No, seriously, I did not expect it to be so good, I can not get enough of it. The chicken, kielbasa, fire roasted tomatoes and red peppers paired so well with the Italian cheese blend and tortellini. This pasta is so creamy and full of flavors you will not want to stop eating it.
I have always loved tortellini but it took some convincing to get my family to even try it. So I was really thankful when I made this recipe.
Everyone said how amazing it smelled and it tasted even better. I like how you have everything you need in one pot or pan!
As far as the chicken and kielbasa, you can totally take them out and make it a vegetarian dish or you can only use one of them. I felt like the kielbasa gave it a lot of extra flavor. I never use regular kielbasa, I only use butterball because it is made from turkey and doesn’t have many added preservatives. But feel free to use your favorite kind.
So, I usually by barilla plain tortellini because I like how it is minimally processed, while frozen tortellini sometimes have added preservatives. You need to cook it a little longer, but in my opinion, it is totally worth it. Anyways, I get home from shopping for this recipe, look at the tortellini and notice that it is cheese and spinach tortellini not just cheese! I used it anyways in the recipe and guess what?! It was delicious! And I got my family to eat some spinach!!!
I often get asked about fire roasted tomatoes, yes, you can make your own. This is a good recipe. But I like to buy them canned. And for this recipe that is what I recommend since you will get more juice from them. They are on the canned vegetable isle. And I usually try to find organic if I can.
I think this creamy tortellini with fire roasted tomatoes has easily became my favorite recipe and it’s just as good left over as it was the day I made it! I seriously can not wait to make it again.
