Easy Pecan pumpkin muffins? Yes please! These muffins give you just enough pumpkin to enjoy and with the extra flavor of the pecans and brown sugar crumble on top they, are absolutely delicious!
Fall is right around the corner, so pumpkin is in the air! For me, as soon as school starts back and August comes to an end, its time for pumpkin spice everything, even if it is still 100 degrees in the south!
So, I was ready to make something pumpkin! And who doesn’t love muffins? Am I right? They just happen to be one of my favorite foods. And pecans are my favorite nut, so here we are with some pecan pumpkin muffins.
This recipe is pretty simple and doesn’t take a lot of each ingredient, just a lot of different ingredients. But well worth it once you get done making them. Especially with the amazing brown sugar crumble on top.
I found that it is important to make sure that we do not over-mix the ingredients, this seems to make the muffins to dense. In the video, I mixed the wet and dry ingredients with a spatula, but I strongly recommend mixing them with a hand mixer. Just make sure you fold in the pecans.
The batter is supposed to be thick!
Now when it comes to making your crumble…do not be afraid to get your hands dirty! This is the best way to make the crumble, although my Grandma used to tell me to use two knives! Our hands work much better!
If you want them to taste a little more “pumpkin pie like” feel free to add a little more pumpkin pie spice and maybe even some cinnamon.
I think the next time I make them I am going to try adding walnuts or maybe some chocolate chips and see how that tastes!

2 1/2 cups all-purpose flour
1/2 cup granulated sugar
1/4 cup brown sugar
2 tsp pumpkin pie spice
1 tsp baking soda
1 tsp baking powder
1/2 tsp salt
2 large eggs
1 cup canned pumpkin
1/2 cup buttermilk
1/4 cup canola oil
1 tsp. vanilla
1 cup chopped pecans
Brown Sugar Crumble
1/3 cup brown sugar
1/2 cup finely chopped pecans
1/4 cup all-purpose flour
1/4 cup cold butter (cut into cubes)
- Preheat oven to 375
- In Large Bowl Mix flour, sugar, brown sugar, pumpkin pie spice, baking soda, baking powder and salt
- Set aside
- In different bowl combine eggs, canned pumpkin, buttermilk, canola oil and vanilla
- Mix wet ingredients into dry ingredients just until moist
- Fold in Pecans
- Place batter in muffin pan
- set aside
For Brown Sugar Crumble
- with spoon mix brown sugar, pecans and flour
- add cold butter
- mix ingredients together (using your hands works best) until crumbly
- place crumble on top of muffin batter
- bake for 15-20 minutes Or until toothpick comes out clean
